Sabse pehle ek heavy bottom pan mein 1 liter doodh ubalein. Jaise hi doodh ubalne lage, usme gradually 2 tbsp vinegar ya lemon juice daalein. Doodh fatne lagega aur chenna alag ho jaayega.
Ek muslin cloth mein chenna nikal kar ache se thande paani se dho lein (taaki vinegar ya lemon ka taste nikal jaaye). Ab isse ache se squeeze karke 30 minute ke liye latka dein taaki extra paani nikal jaaye.

Chenna jab dry ho jaaye to usse ek plate par lein aur 8-10 minute tak achhi tarah se mash karein. Yeh step important hai — isse chenna smooth ho jaayega aur rasgulle soft banenge. Aapka chenna jab ek smooth dough ban jaaye to chhote chhote equal balls bana lein.
Step 3: Sugar syrup banana
Ek pan mein 4 cup paani aur 1.5 cup cheeni daalein. Isme elaichi aur rose water daal kar boil karein. Jab sugar dissolve ho jaaye aur syrup garam ho, tab balls daalein.
Step 4: Rasgulla cook karna
Rasgulla balls ko gently sugar syrup mein daalein. Ab ise dhakkan lagakar medium flame par 12-15 minute tak cook karein. Aap dekhenge ki rasgulle double size ke ho jaayenge – iska matlab ye perfectly cooked hain!
