Cucumber Raita Recipe
Cucumber raita is a refreshing Indian side dish made with yogurt, grated cucumber, roasted cumin and spices. Perfect with biryani, pulao or parathas.

- 2 cups 500 g fresh curd (dahi)
- 1 medium cucumber grated or finely chopped
- 1 tsp roasted cumin powder
- 1/2 tsp black salt
- Salt as per taste
- 1/4 tsp black pepper powder
- 1 green chili finely chopped, optional
- 2 tbsp coriander leaves chopped
- 1 tbsp mint leaves optional, chopped
Whisk 2 cups fresh curd until smooth and creamy.
Wash, peel and grate or finely chop 1 cucumber. Squeeze lightly to remove excess water.
Add cucumber, roasted cumin powder, black salt, regular salt, black pepper and green chili to the curd. Mix well.
Garnish with coriander and mint leaves. Sprinkle extra cumin powder if desired. Serve chilled.
